Carroll's Kitchen is giving homeless women a second chance

RALEIGH (WTVD) -- If you can change the way a woman sees herself, you can change her life. That's how the boss of a new restaurant in downtown Raleigh feels about the women she's going to hire to work there.

Homeless women from around Wake County will be learning to run the restaurant on one of the busiest corners in downtown Raleigh.

The Square Rabbit sandwich and cake shop on the corner of Martin Street and Wilmington Street sits empty. Soon, though, it will be Carroll's Kitchen. The restaurant's mission is to hire single women living in homeless shelters around Wake County, give them a place to live, a job, and on-the-job training on how to run a restaurant.

Jim Freeze and Vicky Ismail came up with the idea.

"We would love to see the women when they finish with us in a year be able to start their own bakery or food truck," Freeze said. "Build them up in such a way that then they can hire other women out of shelters and continue on this social enterprise that we started."

They will need the community's support to make it work. The restaurant is set to open this summer.
