Scratch in Durham makes Yahoo's best pie in every state list

DURHAM (WTVD) -- Scratch is a popular spot on any given day in Durham, and that popularity will only increase after making Yahoo's Best Pie In Every State list.

"Its humbling," said Phoebe Lawless, who owns Scratch. Lawless worked all night two days before Thanksgiving baking up a storm to fill the hundreds of pie orders in time for Thanksgiving.

"I did not do all this myself," Lawless said gesturing to the pie boxes for pick up.

"To be totally honest, it's hard for me to think beyond this cubby right here," she said about winning Yahoo's list for North Carolina. "I'm sure I'll have more of an opinion about it tomorrow but, it's a big honor and it makes me really proud of my staff and how far we've come."

Lawless says her best tip for anyone trying to make a perfect pie is practice and then practice some more.

"Don't make Thanksgiving or Christmas your first attempt at pie," she said.

"Start a few weeks early and practice, practice, practice. Even if you feel like you failed, you probably haven't. So, repetition is the base of really good pastry making," she said.
