Food truck owner prepares for 'biggest event' -- Canes victory parade

RALEIGH, N..C (WTVD) -- As thousands are expected to gather in downtown Raleigh for the Carolina Hurricanes' Stanley Cup celebration, one food truck owner is preparing to serve fans while witnessing a historic moment.

The parade is set to travel along Hillsborough Street to Fayetteville Street, ending with a rally at City Plaza. Streets in the area will be closed as large crowds fill downtown for the event.



Among those taking part is Marcus Jenkins, owner of the Spud Kings food truck, who said the opportunity is unlike anything he has experienced.

"I bet this is probably the biggest event that I've ever been a part of," Jenkins said.



With less than 48 hours to prepare, Jenkins is working to assemble supplies to serve what he expects will be thousands of fans.

"Oh, we do fresh-cut French fries. So we're going to need boxes and boxes of potatoes. We do cheese. We're going to need bacon. We need steak because we do loaded French fries," he said.

Jenkins said being selected as one of about 30 food trucks stationed near Davie Street for the rally is a rare opportunity.

"I could never in a thousand years have imagined this would happen the way that it did," he said.

In anticipation of a busy weekend that includes Juneteenth celebrations, the Stanley Cup parade, and a food truck rodeo, Jenkins said he has stocked up heavily -- including 600 pounds of potatoes. He estimates the weekend could account for about 10% of his annual business.



"Yeah. It'd be something to help my family, and we could put a little money up so we could take a vacation," he said.

Still, Jenkins said the significance of the event goes beyond revenue. He remembers the Hurricanes' last championship run two decades ago and is looking forward to seeing the team celebrate again.

"And the last time the Hurricanes won, I was in college. So I'm excited about this Stanley Cup that they're bringing back home to Raleigh," he said.

Now, years later, Jenkins and his family have followed the team throughout its playoff run and hope to be part of the celebration in their own way.

"If they bring over the Cup, we'll load it with fries," he said.



City officials and organizers anticipate the parade could be the largest in Raleigh's history, drawing thousands to the downtown area for the celebration.
