RALEIGH, N.C. (WTVD) -- New data from the North Carolina Department of Health and Human Services shows cases of Cyclosporiasis continue to rise across the state.

Since May 1, 718 people have been diagnosed with the illness and 24 have been hospitalized, according to NCDHHS. Since July 21 alone, health officials have identified 157 new cases and eight additional hospitalizations.

To help track the outbreak, NCDHHS recently launched a Cyclosporiasis Cases and Outbreaks Dashboard, which will be updated each Tuesday with the latest information.

Recent patient interviews indicate parsley and cilantro are among the foods most commonly reported by people who became ill. However, health officials note that several patients said they had not eaten either ingredient before developing symptoms.

Cyclosporiasis is caused by the Cyclospora parasite and can spread through contaminated food or water.

Adults ages 55 and older have been the hardest-hit group, accounting for 264 cases since May 1. Adults ages 19 to 54 account for another 447 cases.

While rinsing fresh fruits and vegetables may help reduce exposure, health officials warn that washing alone may not completely remove the parasite. Thoroughly cooking food to an internal temperature of 165 degrees Fahrenheit can help prevent infection.

To lower the risk of illness, NCDHHS recommends avoiding raw parsley and cilantro or cooking them before consumption. People experiencing symptoms should also stay hydrated by drinking plenty of fluids, including beverages that contain electrolytes.
